If you are adept at fabrication you can fabricate a thin tubular frame to replace the back and make one using tent canvas. Alternatively you could get one made by a specialist converter, but this would be very expensive.
Look at a Sportrak or F20/50 with soft tops, this will give you an idea of what can be done. I would also recomment fitting a substantial roll cage if you replace the back with a soft top, purely for safety reasons.
The tubular structure is not a Roll Bar, its only bolted to the body/wheel arch area ( prone to rust worm) and not braced, and its main fuctntion is for providing seat belt mounting points, though it offers limited protection in a roll over.

Do not forget these vehicles are "world market" vehicles, in markets where soft tops or pick up variants were available, it was to attach a cab rear panel.
These have no structural integrity, particularly if the back is removed, even the plastic backs provide some protection in the event of a rollover.
